Mint Chip Ice Cream & Brownie Waffle Sandwiches! Whaaat is this!?!?!? If you follow Baking This Simple closely on Instagram, you might notice that Waffle Wednesday is probably one of my favorite days of the week! I think it’s such a fun challenge to come up with unique and creative waffle recipes each week. It’s also fun to contradict the mold for how someone might typically perceive a waffle. That all to say, this week Waffle Wednesday just happens to fall on St. Paddy’s Day! So of course, we had to make something green!
That being said, I didn’t want the waffle recipe I made on St. Paddy’s day, to be a recipe that is limited to one day a year. I wanted these waffles to be ones that could be made any time of year. Which forced me to think about what foods are green, that I eat all year long; besides lettuce, spinach, green beens, brussels sprouts, you get the idea… nobody wants to eat waffles made of vegetables! Veggies are great in a salad, but I strictly forbid them from being made into waffles! Okay, okay, my tangent is over.
Anyway the first thing I thought of was mint chocolate chip ice cream! And then I thought about mint chocolate chip ice cream and brownies, basically one of the best combos on the planet — it’s insanely good! This got me thinking… what if we made Mint Chocolate Chip Ice Cream Brownie Waffle Sandwiches!?!?! It’s a really long name but these Mint Chocolate Ice Cream and Brownie Waffle Sandwiches will knock your socks off! And the best part is, you can make them for St. Paddy’s Day orrr you can make them any time of year!! You’re welcome for that!
How to Make Mint Chip Ice Cream & Brownie Waffle Sandwiches

- In a bowl combine the flour, baking powder, salt, sugar, and cocoa powder.
- In a microwave safe bowl, microwave one tablespoon of chocolate chips for one minute, or until melted. Stir until smooth.
- In a separate bowl, combine the egg, and milk, mix together.
- Mix the dry ingredients into the wet ingredients, then stir in the melted chocolate. Then add in the remaining chocolate chips.
- Spoon a scoop and a half of batter into a heated mini waffle iron (I use this one) and let cook until done, about 2-3 minutes.
- Remove the waffle from the iron and let cool for ten minutes.
- Use a circular cookie cutter or a cup, to cut a smaller circle from each waffle.
- Scoop a large scoop of Mint Chocolate Chip Ice Cream onto a waffle circle, then top with another waffle circle and enjoy!

- Mini Waffle Maker
Ingredients
- 1/2 Cup Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 3 Tbsps Sugar
- 2 Tbsps Cocoa Powder
- 1/2 Cup Milk
- 1 Egg
- 3 Tbsps Chocolate Chips
- 1/2 Gallon Mint Chocolate Chip Ice Cream
Instructions
