And I really, truly, deeply wish that I had the time and patience to make the pastry dough to accompany one… but if we are being 100% honest, and I believe in being honest and transparent, your girl does NOT have the time for that, at least not at this particular moment in time. I mean if I had a whole Saturday just to bake, it would be great, but amidst all the other things I am trying to juggle, it just doesn’t seem to be the case.

I also love this apple galette because you can make it with the ingredients you have on hand. You just cover the apples and tortilla in cinnamon sugar, and let them bake and your apples get all bubbly and golden and your tortilla turns into a cinnamon sugar crust.   1. First, preheat your oven to 350 degrees Fahrenheit.
  2. Cut your apple in half. Using a spoon scoop out the core.

3. Then turn your apple lengthwise and then thinly slice it, about 1/8″.

4. Combine the four tablespoons of sugar with 1 1/2 tablespoons of cinnamon to create cinnamon sugar.

5. In a bowl toss your sliced apples with one teaspoon of lemon juice and two tablespoons of cinnamon sugar. Set aside.

6. Lay your tortilla flat and spread one tablespoon of butter on the top of the tortilla in a circle, about 6 1/2″ in diameter, leaving about a 1 1/2″ space from the edge. Then sprinkle cinnamon sugar on top.

7. Take your sliced apples and starting from the edge lay them in a ring on top of your butter, about 1 1/2″ away from the edge. Then lay another layer of apples in the center of the tortilla, slightly overlapping the previous ring of apples, so the center of the tortilla is covered. Your apples will look like a flour when you’re finished.

8. Then take one edge of the tortilla fold it in, creasing it where the tortilla meets the edge of the apples. Press it down. Then take the edge next to it and fold it in as well, the corner of it will slightly overlap the previous edge. This is good. Press down where the edges overlap.

9. Repeat the process above until all sides are folded down. You should have five folded sides in total.

10. Melt the remaining butter and using a pastry brush, (I used one like this) brush it onto the edges of your tortilla. Sprinkle remaining cinnamon sugar on top.

11. At each corner, poke three toothpicks through the tortilla, in a straight line, where the edges overlap. This will keep the edges from unfolding while baking. Bake for 25 minutes.

12. Then remove from the oven and transfer to a cooling rack. Serve with ice cream, or just by itself!

  • 1 tsp Lemon Juice
  • 1 1/2 Tbsp Cinnamon

Instructions

Apple Prep

Your apples should look like a flower when you're done.
  • Take the edge of your tortilla and fold it in where the tortilla meets the apples. Holding it down with one hand, take the edge next to it and fold it in and slightly over the previously folded edge. Press down where the two edges meet.
  • Repeat the process above until all sides are folded down. You should have five folded sides in total.
