If you’ve known me long enough, or even for just a couple of hours, you know I looove coffee, I really don’t function well without it! There was once a time though, when I thought I could cut coffee out for lent… (my friends are probably reading this right now and dying laughing) I lasted 24 hours. Well maybe ‘lasted’ isn’t really the correct word… more like, I was a partially-functioning-human for 24 hours, without coffee. Then I realized, this is a terrible idea, and I’m pretty sure God made coffee to help us humans survive. So drank a big cup of coffee and decided, I’m never cutting out coffee again!
Anyway, all that to say, I’m pretty obsessed with finding new ways to enjoy my coffee and I’ve had this idea in my head for a while now, to create a coffee infused coffee cake!
This past weekend, I finally had time to do a little recipe testing for it, aaaand it worked! I created a coffee coffee cake that I am sooo excited about!
My fam loved it so much they consumed it in less than 24 hours!
Honestly, I think this is one of my favorite recipes I’ve created to date! This coffee infused Coffee Cake is so easy, and sooo delicious. It has just the right balance of coffee, not too strong that it overpowers, but bold enough that the flavor is warm and bright!
Then it’s topped with a sweet, caramelized pecan glaze, adding a golden, crunchy, and sweet finishing touch, to a bold, soft, and warm cake!
Perhaps the best thing about this coffee coffee cake is…
Now you can have your coffee and eat it too!!! That sounds like the perfect dream to me!

- Preheat the oven to 400 degrees Fahrenheit.
- In a mixing bowl, combine the flour, sugar, espresso powder, salt, and baking soda.
- In a separate bowl combine the egg, oil, milk, and vanilla.
- Combine the wet and dry ingredients. Stir together, then stir in the vinegar.
- Line the bottom of a large loaf tin with wax paper. Pour the cake batter into the loaf tin.
- Bake for 40-45 minutes, or until a toothpick can be inserted into the middle of the cake, and comes out clean.
- Remove from the oven and let cool. Then take a knife and go around the edge of the tin to loosen the cake. Place one hand on top of the cake, and carefully flip the loaf tin over. The cake should fall out of the tin right into your hand. Remove the wax paper off the bottom of the loaf, and transfer the cake to a cooling rack to cool more.
- In a small sauce pan, melt the butter on medium-high heat. Then add in the sugar, and chopped pecans.
- Stir constantly, until the pecans and sugar begin bubbling, and start to thicken. Stir in the half and half, and cinnamon. Remove from the heat.
- Pour the glaze over coffee coffee loaf. Let sit for 10 minutes, until the glaze has cooled and set.
- Save for later, or slice and serve immediately.
