Oh my gosh you guys! These Funfetti Sugar Cookies have my heart! They are little bites of heavenly goodness! Funfetti really makes everything more fun!

The funny thing is, I’ve never really been that big of a fan of sprinkles. The texture of them on the outside of soft desserts, has typically just thrown me off. When funfetti was first becoming a thing, several years ago, (dang that makes me feel old) I voted it out, thinking it would be flavorless, or lame. But boy was I wrong! Funfetti, is seriously one of the best things ever, the sugar in the sprinkles actually adds just a touch more sweetness, bringing out the golden deliciousness of these cookies! Plus the extra color from the sprinkles is just more fun!

Tips for Making Mini Funfetti Sugar Cookies

Tip 1: Aerate the dough. When we first combine the butter and the sugar at the beginning, we want to cream them together for about three minutes to create light and fluffy cookie dough. Light and fluffy cookie dough, when baked in the oven, remains fluffy and conducts heat slowly resulting in thick and evenly baked cookies.

Tip 2: Fold the sprinkles into the dough. This will prevent the dough from being over mixed and will keep the color of the sprinkles from being smeared into the dough.

Tip 3: A 1/4 teaspoon is your best friend! To achieve cookies of the same size, use a 1/4 teaspoon, to scoop the cookie dough. Press the cookie dough flat into the teaspoon to make sure you get the same amount each time, then roll the cookie dough between your hands to form it into a ball.

How to make Mini Funfetti Sugar Cookies

  1. Preheat the oven to 375° Fahrenheit.
  2. In a stand mixer, combine the softened butter and sugar. Starting on low, cream together the butter and sugar for about 3 minutes. Add in the egg and mix for about 30 seconds, then add in the vanilla extract, and mix for another 30 seconds.
  3. In a separate mixing bowl stir together the flour, baking soda, and salt.
  4. Add the dry ingredients into the wet ingredients. Starting on low, gently increase the speed of the stand mixer, until the wet and dry ingredients are just combined.
  5. Fold the sprinkles into the cookie dough. Use a 1/4 teaspoon to scoop out dollops of cookie dough. Roll the cookie dough into balls and place about 12 of them on the cookie sheet. Bake for 8-10 minutes, until the cookies are slightly golden.
