Banana Oat Pancakes

Ingredients

Dry Ingredients

  • 2 cups Rolled Oats
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tbsp Sugar or Honey
  • 1/2 tsp Salt

Wet Ingredients

  • 1 Banana mashed
  • 1 cup Milk
  • 1 tbsp Apple Cider
  • 1 Egg

Instructions

  • Pour the two cups of rolled oats into a blender, and blend until it becomes the consistency of flour. (If there's still some larger oats it's okay.)
  • Once the oats are blended, pour into a mixing bowl and mix together with the baking soda, baking powder, salt, and sugar.
  • In a separate bowl, mix together milk and vinegar.
  • Add the egg, oil, and one mashed banana. Mix it all together.
  • Add the wet and dry ingredients in the blender and blend until well mixed.
  • Turn your stove top to medium-low heat and heat pan for five minutes. 
  • Add a quarter sized puddle of oil to the pan and swirl it around. 
  • Spoon your pancake batter into the pan and let sit until the stop starts to bubble, about two minutes. 
  • Flip and cook on the other side for an additional two minutes. 
  • Top with butter and whatever else you like on your pancakes and eat!

Notes

You can also substitute the sugar with honey, if you don't want any processed sugar in your recipe. 
You can also make this recipe without the banana, if you don't want the banana flavor.
Apple Cider Vinegar can be substituted with White Wine Vinegar.
