Equipment

  • 9.25x5.25" Loaf Tin

Ingredients

For the Banana Bread

  • 1 Cup Flour
  • 1/2 Cup Cocoa Powder
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 3 Bananas overripe
  • 1/2 Cup Peanut Butter
  • 1/2 Cup Oil
  • 3/4 Cup Brown Sugar
  • 1 tsp Vanilla
  • 1 Egg
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Milk
  • 1 tsp Vinegar

For the Topping

  • 1/2 Cup Chocolate Chips
  • 2 Tbsps Peanut Butter
  • 2 Tbsps Milk
  • 2 Tbsps Powdered Sugar

Instructions

For the Banana Bread

  • Preheat the oven to 400 degrees.
  • In a mixing bowl, combine the flour, cocoa powder, baking powder, and salt. Set aside.
  • In a separate bowl, mash the three bananas with a fork, then add in the peanut butter, oil, brown sugar, vanilla, egg, milk and vinegar. Combine the wet and dry ingredients.
  • Line your loaf pan with parchment paper. Pour the batter into the loaf tin. Dump in the half cup of chocolate chips, and use a spatula to mix them into the batter.

For the Topping

  • In a microwave safe bowl, combine half of the peanut butter and half the milk. Microwave for 1 minute. Stir together, then add in the remaining peanut butter and milk, then add in the powdered sugar, and stir until the mixture thickens.
  • Add the remaining chocolate chips to another microwave safe bowl, microwave for one minute, until melted. Stir until smooth.
  • Pour the peanut butter mixture on top of the banana bread batter. Use a fork to smooth it out. Then pour the melted chocolate on top of the peanut butter. Use a fork to swirl it into the batter. Bake for 40 minutes, or until a toothpick can be inserted into the middle and comes out clean.
  • Remove from the oven, and let cool 10 minutes. Use a knife to go around the edge of the pan, to loosen the bread. Remove the loaf from the pan. Slice and eat! (Or save it for later, that works too.)

Notes

To check the doneness of your bread, insert a tooth pick into the middle of your bread. If it comes out clean, it's baked. If it comes out with batter on it, give it a few more minutes in the oven.
