I’m not really sure when it all began, maybe about a year ago, but that was when I became the resident pancake maker of Saturday mornings. See I love pancakes, like loooove them! Especially when they have chocolate chips in them and they’re topped with peanut butter! During the normal work week, I don’t usually have time to make them. But Saturday mornings are IDEAL for pancakes! So I somehow unknowingly, or maybe knowingly, started the tradition of Saturday morning pancakes. The only problem is that now, my family basically expects pancakes every Saturday. Even though they have the recipe, they still wait for me to make pancakes for them! I’m not sure whether I should be honored or concerned?
Anyway, the good thing is, this recipe is a synch to pull together, which is what I am all about. If I had to spend hours in the kitchen making pancakes every Saturday, the tradition would have died quickly. This recipe though is so easy, and soooo yummy. It’s basically a Saturday morning trademark.
Now the other thing that’s so great about these pancakes, is that you don’t need a bunch of fancy ingredients for them! Traditionally, if you want fluffy pancakes you need buttermilk, because buttermilk activates the baking soda/powder, creating light and fluffy pancakes. Buuut, if you’re like me, you don’t keep buttermilk on hand. The good news is, you can totally hack your way around that. Which is what I am all about!
So what’s the secret?
Vinegar. One tablespoon of vinegar combined with one cup of milk, can act as a substitute to buttermilk! Adding vinegar to the milk, acts in the same way as buttermilk, activating the baking soda/powder, resulting in light and fluffy pancakes! Now that you know the buttermilk hack, you can have fluffy pancakes alllll the time! You’re welcome!
Okay, enough about buttermilk, here’s how you make the best fluffy pancakes!
How to make Fluffy Pancakes

- In a mixing bowl, mix together, the flour, sugar, salt, baking soda, and baking powder. Set aside.
- In a separate bowl, combine the vinegar and milk. Then add your egg and oil. Stir to combine.
- Then combine the wet and dry ingredients.
- Turn your stovetop on medium heat. Pour a quarter sized puddle of oil into your frying pan (I used this one.) Swirl the oil around and let your pan heat up for about two minutes.
- Spoon your pancake batter into the middle of your frying pan and let cook until the top of the pancake starts to bubble, about a minute and a half.
- Then using a spatula, flip the pancake over and cook for another minute and a half.
- Remove the pancake from the heat, and top with whatever your heart desires!
Fluffy Pancakes

Ingredients
- 1 cup Flour
- 1 tbsp Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tbsp Vinegar
- 1 cup Milk
- 2 tbsp Oil
- 1 Egg
Instructions
- In a bowl mix together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl mix together the vinegar and milk. Then add the oil and egg and mix it all together.
- Gently fold the wet ingredients into the dry until just combined.
- Turn your stove top on to medium low heat. Add a quarter sized drop of oil and swirl it around. Heat pan for 4 – 5 minutes.
- Spoon your batter into the pan and let cook until the top of the pancake starts to bubble. About a minute and a half. Flip it over and cook for another minute and a half. Remove the pancake from the heat. Top with butter or whatever you prefer and eat.
