Spiced Coffee Cake

So a couple weeks ago, wait no, maybe it was months ago? At the beginning of quarantine… ya definitely months ago. I had the house to myself, so I decided to surprise my family with a coffee cake. I found a recipe on Pinterest (because when in doubt, Pinterest it out!) for a cinnamon roll coffee cake — a classic coffee cake, with cinnamon sugar swirled into the batter, lots of butter, and a cinnamon sugar crumble on top. It was good, but it was almost too sweet for me. Which is saying something, because this girl has got a major sweet tooth!

I say all that because a couple of Fridays ago, I came home from work and felt in the mood for coffee cake, but I didn’t want to make an overly sweet coffee cake, like last time. So I decided to make my own recipe. Aaaand because it’s finally fall, I also felt it was necessary to give it a little fall inspired twist. A.k.a spicing things up a bit, literally. I raided our spice cupboard for my favorite fall spices, cinnamon and nutmeg. Just enough spice, to give the cake the essence of fall!

Then to really nail this coffee cake, I added my favorite ingredient, molasses. My go-to secret weapon, for baking. I put molasses in my cakes, probably nine out of every ten cakes I make, because it creates super moist baked goods. Plus, if you use just the right amount, it highlights the spices really well.

The only mistake I made with this coffee cake, is that I told my family they had to wait until Saturday morning to taste it, so I could take pictures of it first. Well, Saturday morning, they were practically dragging me out of bed so they could sample a piece. After I took pictures of the coffee cake, I don’t think it even lasted a day!

The best part about this coffee cake? It wasn’t too sweet, perfectly balanced, with just a touch of fall. Just the way I like it!

How to make Spiced Coffee Cake

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a bowl, mix together the flour, salt, baking soda, cinnamon, and nutmeg. Set aside.
  3. In a separate bowl, combine the melted butter, molasses, brown sugar, and honey. Stir in the egg, vanilla, and milk. Then pour in your dry ingredients and mix batter until smooth.
  4. Line the bottom of either a loaf tin or cake tin, with wax paper. Pour the batter into your baking tin and bake for 30 minutes.
  5. Remove from the oven and let cool 10 minutes before eating. Add a little butter and cinnamon sugar on top and enjoy!

Ingredients

  • 1 1/2 cups Flour
  • 1/8 tsp Salt
  • 2 tsps Baking Soda
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 cup Butter Melted
  • 1 Tbsp Molasses
  • 1/4 cup Brown Sugar
  • 1/4 cup Honey
  • 1 Egg
  • 2 tsps Vanilla
  • 3/4 cup Milk

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a bowl mix together the flour, salt, baking soda, cinnamon, and nutmeg.
  • In a separate bowl combine the melted butter, molasses, brown sugar, and honey. Add the egg, vanilla, and milk. Mix it together and then combine it with the dry ingredients. Mix batter until smooth.
  • Line the bottom of either a loaf tin or a cake tin, with wax paper, or spray with cooking spray.
  • Pour your batter into your baking tin, and bake for 30 minutes.
  • Remove from the oven and let cool 10 minutes before eating!

Notes

Lining the bottom of your pan: To easily line the bottom of your loaf tin, place your loaf tin on your wax paper. Using a pencil, trace around the edge of your loaf tin. Use scissors to cut out the shape. Your wax paper will be the same size as your loaf tin.
Testing the doneness of your cake: To test the doneness of your cake, insert a toothpick into the center. If it comes out clean, your cake is done!
