Guys! I honestly don’t know what’s gotten into me this week, I’ve been strangely motivated to write blog posts! Honestly for the past few weeks I’ve been struggling to get one done, but this week it feels like all the ideas are just flowing. Today we’re chatting about these Mini Chocolate Chip Cookie Sandwiches! Aren’t these cookies just the cutest thing!? They really take a regular chocolate chip cookie to the next level. They are light and fluffy with a gentle crunch, and a smooth, light bite, of whipped cream cheese frosting! Just typing that out made my mouth water!
The funny thing about these Mini Chocolate Chip Cookie Sandwiches is that they were not originally a part of my planned content, in any capacity. See this past weekend, I made a Chocolate Chip Cookie Cake, (it’s absolutely divine by the way, and will be on the blog next week,) but after I finished making it, I had a bunch of left over cookie scraps, like big chunks of cookie, and some leftover frosting. And I was like, what can we do with these? Well conveniently, I have these new circular cookie cutters I’ve been dying to use, so I cut circles in my leftover cookies, spread some frosting on them, and then topped with another cookie half, and called them cookie sandwiches! And my goodness these are good! They are so simple to make, but present themselves as an elegant dessert.
To make them, we simply make regular cookie dough and bake it on a cookie sheet. Then we use our cookie cutters to cut our giant cookie into small circles. Then we just whip up our frosting, spread it on our cookies and then top with another cookie. So easy and so delicious!
How to make Mini Chocolate Chip Cookie Sandwiches

For the Cookies
- In a stand mixer combine the softened butter, brown sugar, and white sugar. Mix on high for one minute to aerate the batter. Then add in the egg and mix for another minute. Then add in the vanilla extract and mix for another minute. Your dough should be light and fluffy.
- In a separate bowl, stir together the flour, salt, and baking powder. Add the dry ingredients into the wet ingredients, starting on low, gently increase the speed of the mixer until the dough is just combined.
- Fold the chocolate chips into the cookie dough.
- Line a cookie sheet with parchment paper. Dump the cookie dough onto the cookie sheet. Wet your hands and press the dough so that it’s flat. If needed you can use a rolling pin to flatten it out a bit more.
- Bake for 22 minutes or until a tooth pick can be inserted into the middle and comes out clean. Then remove the cookie from the oven and let cool for an hour or until the cookie is completely cool.
For the Frosting
- In a mixing bowl, using an electric hand mixer, cream together the powdered sugar, and cream cheese, until it’s smooth like butter. Add in the heavy cream and cream together until thick. Then add in the lemon juice and vanilla extract. Mix until smooth.
Assembly
- Once the cookies have cooled, use a circular cookie cutter to cut out circular cookies. Spread a little frosting on the bottom of a cookie and then top with another cookie. Enjoy the deliciousness!
