Slow Saturday mornings are my favorite. When you don’t have to wake up to an alarm clock — Praise the Lord! Just the sun, gently peeking its warm light through the blinds. Yes, slow Saturday mornings are my favorite. Last Saturday I decided to enjoy my slow morning with Banana Oat Pancakes! Let me tell you, these pancakes are a winner. Both in taste and ingredients! The banana acts as a natural sweetener, so there’s only one tablespoon of sugar in the entire batch!
They’re also an energizing way to start the morning. I love pancakes, but they don’t usually keep me filled up very long, and sometimes I can feel kinda tired later on, because they don’t have a lot of protein. These banana oat pancakes though are just enough to satisfy, without being too heavy, and they keep me feeling good all morning!
Now I bet you’re wondering “What about the texture, don’t the oats give it a weird texture?” In some cases that might be true, but not for these babies! For these pancakes, I blended the batter, prior to cooking them, which helps to eliminate weird oat chunks.
Probably the best part of this whole recipe though, is that Owen approved them! My brother is my TOUGHEST critic. Anytime I bake or cook, he alllllways, has some sort of feedback. There’s always something I could “change” about the recipe. These pancakes though, hit a home run! He ate six of them!
Do I need to say anything else? I don’t think so. Alright friends, without further ado, here’s how to make these simple Banana Oat Pancakes!
How to Make Banana Oat Pancakes

- Pour two cups of rolled oats into a blender, then blend the oats until they become the consistency of flour.
- Once the oats are blended, pour them into a mixing bowl and mix together with baking soda, baking powder, sugar, and salt. Set aside.
- In a separate bowl, combine the milk and vinegar. Add your egg and oil. Then add one mashed banana. Stir to combine.
- Combine the wet and dry ingredients together and stir together.
- Add the wet and dry ingredients into the blender and blend until smooth.
- Turn your stove top medium low heat.
- Add a quarter sized puddle of oil to your frying pan and swirl it around. Let your pan heat up for about 2 minutes.
- Spoon your pancake batter into the middle of your pan, and let it cook until the top starts to bubble about a minute and a half.
- Using a spatula flip your pancake over and let it cook for another minute and a half.
- Remove your pancake from the pan, top with whatever you like and enjoy!
Banana Oat Pancakes
Ingredients
Dry Ingredients
- 2 cups Rolled Oats
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 1 tbsp Sugar or Honey
- 1/2 tsp Salt
Wet Ingredients
- 1 Banana mashed
- 1 cup Milk
- 1 tbsp Apple Cider
- 1 Egg
Instructions
- Pour the two cups of rolled oats into a blender, and blend until it becomes the consistency of flour. (If there's still some larger oats it's okay.)
- Once the oats are blended, pour into a mixing bowl and mix together with the baking soda, baking powder, salt, and sugar.
- In a separate bowl, mix together milk and vinegar.
- Add the egg, oil, and one mashed banana. Mix it all together.
- Add the wet and dry ingredients in the blender and blend until well mixed.
- Turn your stove top to medium-low heat and heat pan for five minutes.
- Add a quarter sized puddle of oil to the pan and swirl it around.
- Spoon your pancake batter into the pan and let sit until the stop starts to bubble, about two minutes.
- Flip and cook on the other side for an additional two minutes.
- Top with butter and whatever else you like on your pancakes and eat!
