Buttermilk Waffles

Waffles have a special place in my heart. Even more than pancakes, and I loooove pancakes! But waffles, they are my number one, my ride or die, my right hand pal! I love ’em. I think it’s largely due to their texture — a gentle crunch on the exterior, and a soft, fluffy, interior. Pure heaven.

I love them so much, that when I was seven my parents bought me my own waffle maker. Not just any waffle maker though… A Cinderella waffle maker! This thing was legit. On one side was the classic waffle print, and on the other side was a Cinderella and Prince Charming print! I basically wanted to be a Disney Princess growing up, so I was pretty much obsessed with this waffle maker — It was my fave gift for sooo long!

Actually, it was the only waffle maker I had, until I was like 18 (mostly because I was too lazy to buy a normal waffle maker) … I used that waffle maker so much, that one of the legs broke, but instead of just throwing it away, we stuck a shell underneath the broken leg to make it level and just kept on using the thing… I either really loved the waffle maker or I was just too cheap to buy a new one. Probably a combination of both — but yes, my love of waffles goes waaaay back.

The trick to light and fluffy waffles is buttermilk, orrr the buttermilk hack, i.e. milk and vinegar! The acidity of the buttermilk, or milk and vinegar (which is what I always use) helps activate the baking soda, and baking powder, making the batter rise higher than it would traditionally. This is what helps give the slight crunch to the exterior of the waffle and a soft fluffy interior. I looove waffles! I really really do!
