Oh guys, this banana bread, is like nothing else! It’s a classic recipe for sure, but it’s better than classic banana bread, because it has one of my favorite secret ingredients in it. Molasses! I talk about molasses a lot. I probably should have called this blog ‘baking with molasses’ or something like that, because I bake with it so often, but I swear by it! Molasses turns dry recipes into moist baked goods. The best part, you don’t need that much, and you don’t taste it! What a wonderful thing!

I also love this recipe because of its efficiency. You just add all the ingredients together, dump into a loaf tin and bake. Wala! Easy, peasy! Truthfully, I don’t have hours to spend in the kitchen so comforting recipes like this make me so happy!

Okay, enough about the recipe, lets get down to the good stuff, how to make it!

How to make Easy and Delicious Banana Bread

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a mixing bowl combine the flour, baking soda, and salt. Set aside.
  3. In a blender, whirl three bananas. Then add the softened butter, oil, sugar, molasses (I like this one,) eggs, and vanilla. Blend it all up and gently fold the wet ingredients into the dry ingredients until just combined.
  4. Then line the bottom of your loaf tin (I used one like this) with wax paper. An easy way to do this, is to place your loaf tin on top of a flat sheet of wax paper. Using a pencil trace around your loaf tin. Then use scissors to cut out the shape. This will fit perfectly into the bottom of your tin!
  5. Pour your batter into the tin, and bake for 55 minutes.
  6. Remove from the oven and let cool 15 minutes. Then using a knife go around the edge of your loaf tin, to loosen the banana bread. Turn your loaf tin over and your banana bread will fall right out.
  7. Remove the wax paper from the bottom of the loaf.
  8. Slice and serve immediately or save for later!

Ingredients

  • 1 1/2 cups Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 Overripe Bananas mashed
  • 1/4 cup Butter softened
  • 1/4 cup Light Olive Oil
  • 1 cup Sugar
  • 1 Tbsp Molasses
  • 2 Eggs
  • 1 tsp Vanilla optional

Instructions

  • Preheat oven to 350 degrees.
  • In a bowl mix together the flour, baking soda, and salt.
  • In a blender, blend three bananas. Then add the softened butter, oil, sugar, molasses, eggs, and vanilla and blend all together.
  • Fold the wet ingredients into the dry until just mixed .
  • Line the bottom of a loaf tin with wax paper. Pour the batter into the tin.
  • Bake for 55 minutes or until the top of the loaf is golden brown and a toothpick poked in the middle comes out clean.
  • Remove the loaf from oven and let cool 15 minutes. Then, using a knife, gently go around the edge of the tin to loosen the banana bread. Flip the loaf tin over and the banana bread will fall right out.
  • Pull the wax paper off the bottom of the loaf.
  • Serve immediately or store in an airtight container. Best if eaten within a week.

Notes

Wax Paper Tip: To make your wax paper fits the bottom of your tin, place the bottom of the loaf tin on top of the wax paper. Using a pencil, trace around the bottom of the tin. Then cut out the wax paper rectangle, and it should fit perfectly in the bottom of your tin. 
Baking Tip: If you aren’t sure whether your banana bread is done, insert a toothpick or knife into the center of the loaf. If it comes out clean, the banana bread is fully baked.
