Roasted Veggie Pizza

Pizza is one of my all-time favorite foods (aside from ice cream of course!) I means carbs, yes please! A crunchy, soft pizza crust, topped with gooey cheese, and rich roasted veggies. Deliciousness! This Roasted Veggie Pizza is one my favorite pizza’s to make at home! You get golden melted parmesan and mozzarella cheese, mixed with the toasty warm flavor of the roasted tomatoes, sautéed mushrooms, and fresh spinach, with just a touch of garlic and basil, wow is it good!

The trick to homemade pizza though is good toppings and a good pizza dough! Full disclosure, I have always been the person who will ask people for their leftover crust, and also the person who never understood why people don’t eat their crust!!! That’s my favorite part of the PIZZA! Sorry my tangent’s over, but I think you get the idea, a good crust is super important! That’s why when KXPRMT asked if I wanted to try out their pizza dough kit, I was stoked. A gorgeous pizza dough, made with minimal ingredients is a wonderful thing.

Now the other thing that’s critical to a fabulous pizza is the toppings, if you have a good crust but don’t have good toppings, you might as well just eat the crust by itself!

Don’t worry though, this pizza has got the toppings my friend! Regular veggies are okay on pizza, but sometimes I find their flavors to be lacking. Buuut, if we roast/sauté the veggies before hand, the warm butter and heat brings out the full flavor of the veggies, taking the pizza to the next level.

For the Pizza Dough

For the pizza dough, I partnered with KXPRMT, and used their pizza dough kit.

  1. Follow the instructions of the KXPRMT Pizza Dough Kit, to prepare your pizza dough.
  2. Once the pizza dough is ready for the toppings, preheat the oven to 450° Fahrenheit.

For the Toppings

  1. Add the two tablespoons of butter to a small frying pan, on medium high heat. Once melted add in the sliced mushrooms. Sauté them until, they are golden brown. Then remove from the heat.

2. Add the sliced cherry tomatoes, to the hot pan and roast them on medium high heat, until they start to wrinkle and a pick up a slight charred color. Then remove them from the pan.

3. Add the Extra Virgin Olive Oil to the pizza dough, use a pastry brush to brush the olive oil all over the pizza dough.

4. Sprinkle the garlic powder evenly over the pizza dough, and then add the dried basil. Add a couple shakes of salt and pepper to the dough.

5. Sprinkle half of the parmesan cheese evenly over the dough. Add your sautéed mushrooms, roasted tomatoes, and the spinach.

6. Then sprinkle on the remaining parmesan cheese, and place the sliced mozzarella on top. Add a little more salt and pepper onto the pizza.

7. Bake for 18-22 minutes. Until the crust is golden brown and the cheese is golden and bubbling. Remove from the oven.

8. Remove the pizza from the cast iron skillet after 30 seconds. Place the pizza on a cooling rack. Use a pizza cutter or scissors to slice your pizza. Enjoy the delicious pizza.
